This month, aim to build meals around fiber + protein + healthy fats to support steady energy, focus, and heart health throughout the day.

Mindful Mediterranean Quinoa Bowl
Balanced, energizing, and easy to prep ahead
Ingredients (serves 2–3):
1 cup cooked quinoa
1 cup chickpeas (rinsed and drained)
1 cup chopped cucumber
1 cup cherry tomatoes, halved
¼ cup red onion, finely sliced
¼ cup crumbled feta (optional)
2 tbsp olives, chopped (optional)
Fresh parsley or basil
Simple Lemon Dressing:
2 tbsp olive oil
1 tbsp lemon juice
1 small garlic clove, minced
Salt & pepper to taste
How to make it:
Add quinoa to a bowl and fluff with a fork.
Top with chickpeas, veggies, and herbs.
Whisk dressing ingredients and drizzle over the bowl.
Toss gently and serve warm or chilled. Enjoy!
