Lime Cilantro Chicken with Pineapple Salsa

This is sure to become a favorite for your gatherings this summer! The marinade is so versatile, and I suggest making a double batch to freeze so you are ready on the spot for another meal. Pineapple salsa is tangy and wonderful on its own as a dip.


Ingredients:


Chicken Marinade Pineapple Salsa

Fresh lime juice Fresh lime juice

freshly chopped cilantro Chopped pineapple

extra-virgin olive oil Freshly chopped cilantro

Honey Avocado, diced

boneless skinless chicken breasts Red onion, diced




Citrus Salmon Almandine

This simple salmon dish is ready in a flash and extremely popular with it’s mild, but tasty sauce. You will enjoy the benefits of an Omega rich meal and immune boosting lemon and honey. Using coconut aminos instead of traditional soy sauce cuts the sodium content, but not the Asian flavor.

Beans are a staple for heart-healthy snacks. They add filling fiber and healthy complex carbs and protein. If you are buying store-bought beans, go for an organic brand. Give this recipe a try and you will enjoy the fresh flavor and be so proud of making an easy healthy snack!

Mixed Melon and Goat Cheese Salad
